Cranberry Garden Green
Organic Mixed Baby Greens 1 med organic cucumber cubed 1 C organic grape tomatoes 2 Tbsp heaped with organic ground flaxseed 1 lg organic carrot grated 1/2 C cut organic pea snaps 1/2 C organic dried cranberries 1/2 C 100% natural goat feta cheese crumbled 1 Recipe Raspberry Vinaigrette (see below)
- In a large bowl fill with organic mixed greens.
- Add vegetables and cranberries and toss into salad.
- Toss salad with vinaigrette and top with crumbled goat feta.
Raspberry Vinaigrette
1 C fresh mashed organic raspberries 1 Tbsp agave 1 Tbsp organic brown rice vinegar 1 drop Young Living essential lemon oil
- Mash organic raspberries.
- Add agave, rice vinegar and lemon oil. Whisk together well.
- Toss with salad.
(If its not as thin as you would like, add a little more vinegar and a touch of agave until you reach your desired taste.) |
Blueberry Cobbler
2-1/2 C fresh or frozen organic blueberries 1/2 Tbsp organic spelt flour 1/2 C organic maple syrup 2-1/3 C organic spelt flour 2 tsp aluminum-free baking powder 1 tsp organic fresh squeezed lemon juice 1/2 C pure water 2/3 C Young Living V6 oil 1/2 C agave 1 organic egg
- Warm maple syrup and mix in Tbsp spelt flour. Pour into warm glass baking dish. Add blueberries.
- Beat Egg. Add oil, agave and water. Beat thoroughly. Add lemon juice. Gradually stir in dry ingredients. Beat for 2 minutes. Pour over blueberry mixture.
- Bake at 325 for 20-25 minutes.
